The Inertia

The only bad thing about gorgeous, summer weather? It can crush your appetite. There’s nothing like a little heat to make every kind of food sound unappealing. These delicious summer rolls from Lina Saber are perfect for when you just can’t figure out what to eat. They’re hydrating, and they make a great light summery lunch or snack. Plus, they’re loaded with fruit fuel, nutrients, and phytochemicals to protect a surfer’s skin from the sun.

Ingredients

-12 rice paper wraps

For the filling:

-1 big mango, sliced
-1 big avocado, sliced
-3 kiwifruits, sliced
-4 cherry tomatoes, sliced
-1/2 cup alfalfa sprouts
-1/2 small purple cabbage sliced
-3 mint leaves

For the Rice:

-1 cup of sticky or sushi rice
-1/2 cup of coconut milk
-1/2 cup of water
-Pinch of sea salt
-Put all the rice ingredients in a pot, mix them together. Cook them on high heat until they come to a boil and then lower the heat to low, cover tightly with lid and cook for 20 mins.

-Prepare your fruits and veggies: shred, slice and chop as you like. Feel free to add any fruits or veggies you like.

-Let the rice cool, before using.

-To make the wraps, fill a large bowl with hot water (not boiled) and completely dip your rice paper for 15 secs, until slightly soft. Remove it carefully and place on a dry surface (marble/ glass surface works better than wood).

-Arrange your rice in the center and directly in front of it, arrange your fruits as you desire. (Get creative)

-Roll it up, like a sushi roll or burrito, sealing the sides tightly. When done rolling, She recommend letting it sit for a bit, so the rice paper dries. She finds it tastes better.

-Dip in sauce of choice! She used, Stonewall Kitchen’s Cranberry Ginger Sauce. Enjoy!
