To be honest, I have never been the biggest fan of tofu. There’s something about the texture that kind of gets to me. That being said, tofu done right is a real treat, and this recipe from The Woks of Life prescribes a genius way for cooking crispy and flavor packed tofu. I am a devoted fish taco lover, but I tried this recipe last week, and absolutely loved it. I recommend topping with avocado slices, corn, and shredded cheese. Ingredients

1 package firm tofu

1 tablespoon Sriracha

1 tablespoon honey

1/2 cup fine cornmeal

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon garlic powder

1/8 teaspoon pepper

1/4 cup oil

3 scallions

1 bunch cilantro

1/4 cup yogurt

warm corn tortillas

Other toppings:

shredded cheese

chopped tomato

chopped onion

sweet corn

avocado

lime wedges

Directions

Cut up tofu into 3/4 inch cubes. In a wide and shallow bowl, combine both the Sriracha and honey. Then add tofu to the mixture. In a different wide, shallow bowl, combine together the cornmeal, chili powder, cumin, salt, garlic powder, and pepper. Toss the tofu in this dry mixture until well-coated.

Cut up tofu into 3/4 inch cubes. In a wide and shallow bowl, combine both the Sriracha and honey. Then add tofu to the mixture. In a different wide, shallow bowl, combine together the cornmeal, chili powder, cumin, salt, garlic powder, and pepper. Toss the tofu in this dry mixture until well-coated.

In a non-stick skillet, heat the oil over medium high heat. Add in the tofu and crisp the pieces on all sides. While cooking the tofu, combine the scallions, cilantro, and yogurt in a food processor or blender. Put together your tacos with tortillas, the yogurt sauce, the tofu, and any additional toppings you’d like.
