The Inertia

This overnight breakfast is the best way to wake up in the morning. The raspberries make it tangy and sweet, and the chia will fuel you for the rest of the day. Make it 30 minutes before you eat, or for even better results, make it the night before and allow it to chill in the refrigerator.

Ingredients

1 cup / 125 g fresh or thawed frozen raspberries
1 pinch ground vanilla
3 tbsp desiccated coconut
3 tbsp chia seeds
1 cup / 240 ml plant milk (almond, coconut, or oat milk)

Toppings

nut butter
hemp seeds
kiwi
fresh mint

Instructions

-Mash the berries in a bowl using a fork or spoon.

-Add vanilla, coconut and chia seeds to the bowl. Stir to combine.

-Add in the milk. Mix well.

-Soak for minimum 30 minutes or leave overnight in the fridge.

-Serve in a bowl or mason jar. Top with nut butter, hemp seeds, fruit and mint.
