The Inertia

There’s no better way to top off a Sunday than with a big, healthy dinner. It winds down the weekend, and the meal prepares you for a long week ahead. Give this cilantro lime shrimp a try tonight. The shrimp is packed with protein, and the cilantro and lime brings a fresh flavor. I suggest serving with rice and a simple salad.

Ingredients

1 lb tail-on jumbo shrimp, peeled and deveined
1/4 teaspoon salt or to taste
Big pinch of cayenne pepper
2 tablespoons olive oil
4 cloves garlic, minced
3 tablespoons chopped cilantro (stems and leaves)
1 tablespoon unsalted butter
2 tablespoons lime juice
Fresh lemon wedges

Instructions

-Season shrimp with salt and cayenne pepper.

-Heat up skillet. Lightly sauté the garlic in olive oil before adding in the shrimp.

-Add shrimp. Stir until halfway cooked.

-Once halfway cooked, add in the butter and cilantro. Stir to combine.

-Add the lime juice. Continue cooking until the lime juice has dried up. The shrimp should be fully cooked and slightly charred.

-Serve and top with slices of lime.
