The Inertia

When we think of dessert, we usually don’t think of anything green (except for maybe green M&M’s). This recipe certainly changes that. I don’t know who thought to include two green superfoods, avocado and matcha, in a popsicle, but I have to commend them for their creativity. The best part about these pops is that they’re super easy to make, and you can just keep them in the freezer.

Ingredients

3 ripe avocados

1 1/2 cup milk (soy or any nut milk works fine)

3 tbsp maple syrup or other liquid sweetener of your choice

1/4 tsp vanilla bean seeds or paste

1/2 tsp matcha green tea powder

1 tbsp coconut oil

optional: dark chocolate for dipping

Instructions

-Blend all ingredients until smooth.

-Taste and adjust the sweetness as needed.

-Pour into popsicle molds.

-Freeze for at least 6 hours.

-If you want to dip them in chocolate… melt chocolate with a tsp of coconut oil. This prevents it from hardening too quick.

-Pour chocolate into a wide cup and dip pops into it. Set on a piece of parchment paper.

-Enjoy!
