I stumbled across a recipe from Eye Doc Bakes that changed my life a little bit. As it turns out, you can make sweet, delicious, frosting for cupcakes, cakes, cookies, and other treats from everyone’s favorite health food, the avocado. Say what?
I’ve tried creamy chocolate mousse made with avocado, but I kind of just assumed that was pretty much pushing the limits of the use of avocado in the dessert realm. I also generally assume that anything with chocolate in it will taste good. I was super wrong. Avocado isn’t just a creamy spread for your morning bagels; it’s also a creamy spread for your favorite baked goods.

1 large, ripe avocado
2 tsp lemon juice
3-4 cups of powdered sugar
1/2 tsp vanilla extract
8-oz cream cheese (optional)
