The Inertia

The best way to dress up a bland looking food? Add color. The best way to add color? Add fruit. And if you’re going to add fruit, you might as well add a lot of fruit. That’s the approach this recipe took to make some otherwise plain looking chia seed pudding appear spectacular. Nothing like a little fresh papaya to make a dish pop. Plus, the pudding is topped with bananas, coconut flakes, and cacao, so the flavor is definitely on point. Give it a try, and let us know what you think.

Ingredients

-1/4 cup chia seeds
-1 cup of plant milk
-1/3 cup coconut cream
-2 Tbsp of cacao powder
-3 Tbsp desiccated coconut
-1 Tbsp maple syrup
-Banana slices
-Cacao nibs
-Cinnamon

Instructions

-Soak the chia seeds in plant milk and coconut cream overnight. That way they’ll be ready to go the next day.

-Mix in the cacao powder, dessicated coconut and maple syrup. Stir until combined evenly.

-Top with bananas, desiccated coconut, cacao nibs, and cinnamon as desired.

-Serve in hollowed out papaya boats.
