Energy bars aren’t always all that they’re cracked up to be. While they do provide fuel on the go, they definitely have their downsides. Many are packed with sugars and use far too many processed ingredients. Plus, these bars tend to have far more calories than you bargained for, and some are even comparable to eating a small meal.
This fig bar recipe, however, changes the game. The bars are loaded with fiber, and they have a just touch of sweetness. These are truly healthy snacks that you can take with you wherever you go.
Ingredients
Dough
2 cups almond meal
¼ cup almond butter
¼ cup almond milk
¼ cup maple syrup or blue agave
2 Tbsp. chia seeds
1 ¼ tsp. cinnamon
½ tsp. vanilla extract
¼ tsp. sea salt
Filling
1 ½ cup dried figs
1 ½ tsp. fresh lemon juice
1 ½ tsp. vanilla extract
Instructions
-Soak the figs in hot water. Set aside.
-Combine all the dough ingredients in a food processor until thick and sticky.
-Place the dough in between two pieces of wax paper. Roll out the dough with a rolling pin until it is approximately 1/4 inch thick and in a square shape.
-Set dough in the refrigerator for at least an hour.
-For the filling, drain the figs, and add them to a food processor along with the lemon juice and vanilla. Combine until it forms a smooth paste.
-Spread the filling evenly over half the dough. Fold over the other half of the remaining dough, and press the edges together, sealing in the filling. Refrigerate for an hour.
-Cut into 8 logs first, and then into 16 individual bars.
