The Inertia

Have a major sweet tooth, but trying to eat healthier? Here’s a solution: vegan chocolate. It’s still a decadent treat, but it cuts out a lot of the crap found in regular chocolate. This recipe has only 3 ingredients: cocoa butter, maple syrup/agave nectar, and cocoa powder. It honestly could not be more simple.

Ingredients

1 cup finely chopped cocoa butter (packed)

3-5 tbsp maple syrup or agave nectar

1/2 cup unsweetened cocoa or cacao powder

Directions

-Arrange 14 cupcake liners on a small baking sheet.

-Add about 2 inches of water in a saucepan and bring to a boil. Set a medium glass or ceramic bowl on the top so that it doesn’t touch the water (making a double boiler).

-Add cocoa butter to the bowl and allow it to melt which should take about 2-3 minutes.

-After the cocoa butter has melted, add the maple syrup or agave. Combine by using a whisk or wooden spoon. Remove from heat and turn off the stove once they are completely combined.

-Once removed from heat, add cocoa powder and whisk the mixture until smooth.

-Carefully pour the chocolate into the cupcake liners.

-Transfer to the refrigerator and let cool for about 10 minutes.

-Enjoy!
