The Inertia

At my house, salsa is its own food group. On any given day, we may have anywhere from 3-7 different varieties of salsa. There’s never an excuse not to have the perfect salsa to accompany any kind of taco, burrito, salad, grilled cheese, popcorn, hamburger…or any other type of food that just needs a little zest. That being said, the one salsa my house is usually lacking is the homemade variety. No matter how good the bottled salsa, nothing can compare to fresh-made salsa that’s packed with veggies. Plus, when you make salsa at home, you can be sure to skip the preservatives and additives as well as tailor the sauce to your personal taste. This recipe takes only 5 minutes, so there’s no excuse NOT to try it.

Ingredients

1 1/2 lbs large grape tomatoes

1 1/2 lbs yellow tomatoes

1/2 medium sized red onion peeled

3 small jalapeño peppers

1 clove garlic, minced

Handful of cilantro

1/2 tsp red wine vinegar

1 lime, juiced

Salt and pepper as desired

Method

-Chop the tomatoes, onion, and jalapeños roughly.

-Combine all ingredients in a food processor.

-Pulse together (longer for a smoother consistency and shorter for a chunkier salsa).

-Serve with a dish or just a bowl of tortilla chips.
