This might be the easiest salad you’ve ever made, and it’s incredibly refreshing. Without a lettuce base, the veggies really speak for themselves, and overall it has the feel of a salsa rather than a traditional salad. Plus, most of the veggies are high in water and fiber content, so this salad is uber hydrating and will keep you full for hours after.
Ingredients
1 English cucumber, diced
1 can black beans, rinsed
1 1/4 cups corn
1 red pepper, diced
1 cup cherry tomatoes
1/2 cup packed fresh cilantro, chopped
1 lime
1 avocado, diced
Salt and pepper
Method
-Throw the cucumber, corn, red pepper, cherry tomatoes, black beans, and chopped cilantro into a bowl. Squeeze in the lime juice and stir well.
-Season with salt and pepper to taste and toss in the avocado.
-Optional: add a light vinaigrette (lime works well).
-Serve and enjoy!
