The Inertia

If you like Piña Coladas and getting caught in the rain…you’ll love this chia seed pudding. It’s sweet, it’s quick to make, and it will definitely take you away to some place warmer and sunnier. This recipe serves 4, so there’s plenty to share with friends and family.

Ingredients

½ cup chia seeds
1 can (13.66 fl ounces) coconut milk (full fat will be richer, lite or low fat will be lighter)
1 tsp butter
1/2 tsp brown sugar
1 cup pineapple
¼ cup sweetened coconut shreds, toasted

Instructions

-Mix chia seeds and coconut milk together and set to the side. Allow the seeds to soak for about 10 minutes.

-Toast coconut shreds with a little bit of butter in a small sauce pan. This should take about 2 minutes.

-Slice pineapple into small pieces.

-Remove coconut shreds from the pan when they are crisped to a golden brown. Add pineapple to the pan without rinsing. Add in a little bit more butter and the brown sugar as well. Sauté the pineapple until it is warm.

-When the pudding looks thick, scoop it into serving bowls. Top with the pineapple and coconut shavings and serve!
