This chicken recipe is awesome. It’s super simple to make, and it only takes about 10 minutes to cook. After you get off work, or even in the morning, place the chicken in the marinade so it’s ready to go when hunger strikes. Then, just throw on the grill or the pan, and it will be cooked to perfection in no time. Packed with spices and protein, this meal certainly doesn’t compromise flavor for nutrition. Enjoy!

 

Serves 4 | Prep Time: 15 Minutes | Marinating Time: 2 hours | Cook Time: 10 Minutes

Ingredients:

2 – 2.5 lbs skin on chicken thighs

Marinade: 

-1/2 cup fresh lime juice

-3 teaspoons fresh lime zest

-1/4 cup olive oil

-4 tablespoons fresh cilantro, chopped finely

-2 jalapeño, chopped finely

-4 garlic cloves, chopped finely

-1 tablespoon honey

-2 teaspoons salt

-1 teaspoon chili powder or to taste

 

Method:

-Rinse chicken thighs, remove bones, and pat dry with paper towels while leaving the skin on. Set aside.

-In a large bowl, whisk together the ingredients of the marinade. Make sure the marinade is well mixed.

-Add pieces of chicken to the marinade. Stir and coat the chicken evenly. Marinate for 2 hours.

-Fire up the grill and brush oil on the surface. Place the chicken on the grill, and top with a small amount of the garlic, cilantro, and jalapeño. Grill chicken pieces until they turn golden brown with char marks on both sides. Serve immediately.

Note: 

This chili lime chicken can be cooked a couple different ways: either in a cast-iron grill pan, a regular skillet, or baked in the oven. To cook in the oven, heat oven to 400F. Bake chicken for about 20-25 minutes or until the skin becomes brown.
