The Inertia

A good chicken dish is the MVP of your weekly meals. It’s good almost anytime, and it provides you with a solid meal that leaves you full and satisfied. Plus, it keeps well in the fridge for great lunch leftovers. This sesame chicken bowl dish from the Greatist is sure to be just that, and no doubt it can easily become one of your weekly staples. It’s packed with flavor, and with a meat, a grain, and a veggie it provides well-rounded nutrition. Bon appétit!


10 Ingredients

3 tablespoons soy sauce, divided

3 tablespoons tahini, divided

3 tablespoons honey, divided

1 tablespoon sesame oil

1/2 pound boneless, skinless chicken tenders

1 tablespoon canola oil

3 cloves garlic, peeled and minced

3 cups dark leafy greens (such as spinach, chinese broccoli, or kale), trimmed and chopped

1 cup cooked grains (such as brown rice or quinoa)

1 tablespoon toasted sesame seeds

Directions

-Mix 1 1/2 tablespoons each soy sauce, tahini, and honey and sesame oil in a small bowl until they are evenly combined. Pour the sauce over chicken and marinate for 10 minutes.

-Boil a large pot of salted water. Add greens and cook for 1 to 2 minutes, until bright green. Drain the pot and run the greens under cold water to prevent further cooking. Set aside.

-Heat canola oil in a frying pan over medium heat. Add garlic and saute for 1 to 2 minutes.

-Add both chicken and marinade to pan. Cook for 2 minutes on each side, or until cooked through.

-Add grain and stir to coat it with sauce. Cook for 1 to 2 minutes until rice is sticky. Remove from heat and stir in the remaining greens.

-Whisk together additional soy sauce, tahini, and honey. Drizzle over chicken mixture and sprinkle with sesame seeds.
