This tomato soup recipe is comprised of some pretty powerful ingredients, and it will have you feeling like a million bucks. Tomatoes themselves are loaded with the antioxidant lycopene which can be helpful in preventing heart disease as well as various cancers (prostate, breast, lung, bladder, and pancreas to name a few). Additionally, the turmeric powder is has potent anti-inflammatory properties that fight oxidative stress and inflammation. These work together to stimulate the detox function of the liver. Plus, there’s no doubt this soup pair excellent with a classic grilled cheese.
5 oz cherry tomatoes, rinsed and cut in halves
1 can diced tomatoes with their sauce
1/2 cup low-sodium vegetable stock
1 small onion, finely diced
2 garlic cloves, minced
2 tsp turmeric powder
1 tsp coconut oil
1/2 tsp sea salt
1 tsp dried basil
1 tbsp apple cider vinegar
Freshly ground black pepper
Mixed seeds and nuts to garnish
-Heat the tsp of coconut oil in a sauce pan, and fry up the onion and garlic. This should take about a minute.
-Add in the turmeric and cherry tomatoes. Cook the tomatoes until they soften.
-Add the can of tomatoes along with the vegetable stock, apple cider vinegar, and basil. Bring the mixture to a boil, and then cover with a lid, and allow it to simmer (5 minutes).
-Transfer the mixture into a blender and pulse until creamy.
-Pour into serving bowls and season with salt and pepper. Garnish with mixed seeds and nuts.
